Luscious Lemon Bars

Basics

• Oven Temperature: 350°
• Bake Time: 15 minutes
• 9 inch square pan

Ingredients

Crust

• 1 cup flour
• 1/4 cup confectioners sugar
• 1/2 cup margarine

  Cut in shortening
  firmly pressing
  in square pan

Crux

• 3 eggs
• 1 cup sugar
• 2 T flour
• 1/2 t. baking powder
• 1/2 cup lemon juice

Preparation

1. Mix-beat eggs, dry ingredients and lemon juice.
2. Pour over crust in pan.
3. Return to oven for 25 minutes.
4. Ice with a mixture of:
   • 1/2 cups sifted confectioners sugar
   • 1 1/2 t. cream
   • 1/4 t. vanilla
5. Cut in 2 x 1 bars.
